I love chickpeas.
Roast them, throw them in a stew, they pretty much are one of my favourite things to snack on.
Here is my roasted chickpea recipe.
Wanna know how to roast them yourself?
First, you need to soak your dried chickpeas.
I used 1 cup of dried chickpeas and soaked them in 2 cups of water overnight.
All soaked up, tripled in sized.
Line a cookie sheet with parchment paper, and bake those suckers at 450 for 30 minutes.
DO NOT be alarmed, if some explode, they are fine.
Also, if they do explode, make sure you get them out of the oven before you use it again. Otherwise your house will be smokey…not like I did that. haha…
Do not oil or salt them before you roast them.
Nice and crispy.
In a small bowl combine 2 tablespoon of olive oil and 2 tablespoon of seasoning (I used lemon and herb seasoning)
Mix it all together, and enjoy!

Recipe:
1 cup dried chickpeas
2 cups water
2 tablespoons olive oil
2 tablespoon seasoning
Soak chickpeas overnight in water.
Next day drain chickpeas.
Line a cookie sheet with parchment paper, and spread the chickpeas on a single layer on the sheet.
Bake the chickpeas for 30 minutes.
While the chickpeas are baking, mix together the oil and seasoning.
After the chickpeas are done baking, mix the chickpeas with the oil/seasoning mixture.
Enjoy!
